It is so easy and sometimes it seems like it‘s the hardest and most complicated thing in the world. Messing up the simple things is something that makes me extra mad.
I am sitting at the Private Wein Compilation with Janni and I need something proper to eat, knowing that there will be wine today. What else? He recommends the little Italian place next door with supposedly good pasta.
We fetch a menu and I decide to go for a Spaghetti Carbonara. A classic. Not the one with all the cream in it but the real deal with egg, bacon and cheese only.
When I receive the plate I can already tell that this is proper pasta. Proper Carbonara. The noodles are perfectly cooked al dente and the rest just falls into place. Simple, delicious and very good. I am not looking for deep complexity here but good ingredients and proper craftsmanship. It should be so easy but you rarely get it this way.
Delightful. Won‘t be the last pasta I had here.
